Extra virgin olive oil
Les Moulins Mahjoub turn olive oil into an art form. The family-owned company crafts EVOO in the Berber tradition, eschewing mechanical techniques for ancient methods, starting with hand-picked Chetoui olives stone ground and pressed through natural fiber mats. The oil that rises to the top is then decanted à la feuille or “by foil,” using a metal cup to scoop off the coveted first-pressing for an olive oil that’s luscious, clean and ideal for cooking dinner or drizzling atop a bowl of hummus.
