The family-owned estate follows a traditional Amazigh method, eschewing industrial processes in favor of time-honored techniques.
Hand-picked Chetoui olives, a native Tunisian variety known for its bold, peppery character, are stone-ground and pressed through natural fiber mats. This allows the oil to separate slowly and naturally. The first pressing is then carefully decanted à la feuille—or “by foil”—using a metal cup to skim the surface.
The result is a cold-pressed extra virgin olive oil that is luscious, clean, and beautifully balanced—ideal for finishing dishes, drizzling over salads, or elevating everyday cooking.
