Known in Tunisia as mhamsa, these whole wheat grains are larger than traditional couscous and come in a generous 1.1 lb (500 g) glass jar. The sun-dried result is a toasty staple known locally as m’hamsa that integrates easily into stews or served alongside meat or seafood.
